MAMA MARONI'S MACARONI AND CHEESE
An amazing macaroni grill recipe to try !
INGREDIENTS
  • 1 lb. package (spiral ribbed macaroni)
  • 1 lb. medium/sharp yellow cheddar cheese block, cut into small pieces - about 1/4 in. sq.
  • 1 pkg. shredded Mozzarella
  • 1 pkg. shredded Monterey Jack and cheddar
  • 1 1/2 sticks butter
  • 1/4 Vidalia onion, chopped
  • 2 cups milk
  • dried bread crumbs - about 1 1/2 cups
  • salt & pepper
MACARONI GRILL INSTRUCTIONS
This would make a nice side dish to a baked ham or kielbasa for a large dinner, or be perfect as a main course alone with a light salad or vegetable.

First of all Cook macaroni according to package - about 11 minutes, and preheat oven to 350F.

And then While macaroni is cooking, melt 1 stick butter in frying pan. Add melted butter to breadcrumbs in a 2 cup glass measuring cup or bowl.

Next is to Stir and pack so that all crumbs are evenly coated and absorbed.

Melt the other 1/2 stick of butter in the same pan and add chopped onions. Cook and stir on medium/low heat until translucent and just beginning to brown.

Drain macaroni and return to cooking pot. Add shredded Mozzarella, salt and pepper and stir to coat pasta.

Add chopped cheddar to sauteed onions in pan, and top with the milk. Stir over medium heat until cheese starts to melt. Sprinkle a couple handfuls of the shredded Monterey Jack and cheddar and stir until chunks of cheese are pretty small, but not completely melted. Remove from heat.

If desired, add a little more salt and pepper to macaroni/Mozzarella mix. Pour sauce over and stir until well mixed.

Butter 1 or 2 large baking/casserole dishes.
Pour macaroni and cheese mixture into pan (s) and smooth.
Sprinkle buttered breadcrumbs around edges of pan, but not too far into the center.
In a diagonal design sprinkle lines of remaining shredded Monterey jack and cheddar over casserole.
Bake in 350 oven for 35 minutes. The macaroni grill recipe is ready...nice one !

ANDY'S TOMATO & CHEESE MACARONI
A great macaroni grill recipe to try !
INGREDIENTS
  • 2 cups macaroni
  • 1 quarts tomatoes
  • 1 tsp. sugar
  • 1 tsp. dry mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp celery seed
  • 1 cup grated cheddar cheese
INSTRUCTIONS
Cook and drain macaroni according to package directions. Spoon 1/3 of can of tomatoes into a well greased 1 1/2 quart casserole dish. Mix the remaining tomatoes with spices. Stir in the macaroni, combine well, and pour into an oven-proof casserole dish. Top with grated cheese.
Bake at 350 for 35 minutes.

INGREDIENTS
  • 1 lb. box of Mueller's elbow macaroni
  • 1 lb. extra sharp cheddar cheese, grated
  • 1/2 lb. butter
  • about 1 quart of milk
  • salt
INSTRUCTIONS
Preheat oven to 350 F degrees.

Cook macaroni according to directions. Drain.

Grease a 2 quart baking dish generously with butter. Spoon in a layer of cooked elbows. Place 1/2 pats of butter evenly spaced over the top of this layer. Salt the top of the layer, and then top with a layer of cheese.

Starting with more macaroni, repeat layers several times, ending with a generous amount of cheese. Gently pour in milk just till it becomes barely visible below the final layer.

Bake or grill till golden brown on top, about one hour.
The macaroni grill recipe is ready to serve hot...nice ! Enjoy it !

MACARONI LOAF

MACARONI LOAF
INGREDIENTS
  • 1 cup elbow macaroni, cooked
  • 1 tablespoon fresh parsley, coarsely minced
  • 1 small onion, grated or finely chopped
  • 2-3 jalapeno rings, finely chopped (optional)
  • 1 cup milk
  • 1 cup grated Cheddar, American or Monterrey Jack cheese
  • 1 cup soft bread crumbs
  • 1/2 tsp. paprika
  • 1/4 cup butter, melted
  • 3/4 tsp. salt
  • 3 eggs
INSTRUCTIONS
This recipe lends itself to simplified preparation in a food processor, but one is not required. If you have no food processor, use a hand grater to grate the cheese, onion, and bread crumbs.
There is no need to wash the food processor bowl between ingredient changes for this recipe.
Cook elbow macaroni according to package directions. Drain.
Using the metal blade of the food processor, process fresh bread (with the crusts removed) to make 1 cup, about 4 or 5 slices.

Fit food processor with a grating disk. Grate the onion, then grate the cheese. Cheese grates more easily if frozen for 10 minutes (no longer).
Combine all ingredients (remove blade and mix right in the processor bowl using a rubber spatula).

Transfer mixture into a casserole or 9x5x3-inch loaf pan that has been wiped or sprayed with oil. Set the pan into a larger pan in the oven and fill the outer pan with two inches of water (or almost half-way up the side of the casserole dish).

Bake/grill at 375°F for 45 minutes or until set and lightly golden.

This makes an excellent side dish for meatloaf. The macaroni grill recipe is ready to serve with tomato sauce or mild salsa...nice one !
